Bandi clam puff fritters

At the Mamma Granda Inn, orbiting around the Antares Spherogram you can have the most delicious Bandi Clam Fritters in the Helian Sphere, which she says is an original Zarrascategui recipe. You may use Cockles (preferred) or other clams if you do not have the delicious Bandi variety from the Swan galactic sector.
• 750 gr cockles (inc. shells)
• 1 egg
• 1 hpd. tsp baking powder
• white wheat flour
• one garlic clove
• peg of parsley
• sunflower oil for frying
-Freeze the clams. Prop them open with a blunt knife before they thaw completely and let them drain in a sieve for 30 milideons collecting the juice.
-Mix an egg into the clam juice, black pepper, pound garlic and parsley.
-Add the flower with a sieve and mix constantly until the dough is barely thick enough to be able to put dollops in the hot oil using two spoons. Mix the baking powder with some flour to add it.
SECRET TIP: For your fritters to puff up really, and become gallacticly delicious, place the dough in the fridge or freezer until it is cold, probably a few hours or half an hour respectively, before you fry them.
When frying, make sure the oil is quite hot, do not fry many fritters at the same time and let it heat up between batches of fritters.
